CHEF'S DELIGHT: Mediterranean Fish Pie

Slimming World

INGREDIENTS

One medium floury potato, thinly sliced

Low Calorie Cooking spray

150g frozen mediterranean vegetables (check they're oil free)

One small onion, finely chopped

227g can of chopped tomatoes

1tbsp Tomato Puree

1tbsp Capers, drained

One large skinless and boneless white fish fillet, cut into bite-size chunks

METHOD

Preheat the Air Fryer to 180C. Spray the potato slices & air fry for 10 minutes, turning half way through.

Remove and set aside

Increase the temperature to 200C, put in the veg and onion and cook for six to eight minutes until softened.

At the same time mix the chopped tomatoes, tomato puree, capers and some seasoning in a large bowl. Stir through the fish and veg when ready. Spoon into a small oven proof dish and give it a five-minute blast in the air fryer.

Reduce the temperature to 160C. Take the basket out & give the fish mixture a gentle stir.

Arrange the potato slices on top in an overlapping pattern, spray & cook for 15-20 minutes, or until the potatoes are golden. Serve with salad.
