Quick and easy delicious blueberry loaf

INGREDIENTS

125g self raising flour

90g brown sugar

4tbsp melted butter

Two eggs

Two handfuls of raspberries

Oven 180c for 35-40 minutes

METHOD

In a bowl combine your sugar butter and eggs and mix well.

Stir in your blueberries.

Add in the flour and fold through until combined.

Pour your mixture into a lined 2lbs loaf tin and bake for 35-40 minutes.

Allow to cook for 5 minutes in the tin the remove and allow to cook fully on a wire rack.
