Almond & Orange Cake
Recipe by Paula Heatley
INGREDIENTS
225g butter
200g caster sugar
Four eggs
50g plain flour
180g ground almonds
Zest of 1 large orange
15ml orange juice
METHOD
Prehead the oven 180c.
Cream butter and sugar until pale and fluffy. Add the eggs one at a time, beating between each addition and add a little flour with each egg.
Fold in the rest of the flour ground almonds orange zest and juice
Pour the mixture into an 8” lined cake tin and bake for 40-50 minute until a skewer, when inserted, comes out clean.
Leave to cool for 10 minutes in the tin. Then remove and allow to fully cool on a wire rack. Enjoy with a nice cup of tea or coffee.
